Introduced this term as part of our cultural menu, this One-pot Brazilian Rice dish has taken centre stage at many mealtimes. Not only does it offer a delicious mix of flavors and textures, but it's also a testament to the wonders of exploring new cuisines and ingredients. Our children have expressed immense love for this dish, demonstrating that introducing them to a diverse range of foods can be both fun and nutritious. Here's the recipe so you can try it at home!
Ingredients:
3 tbsp. Olive Oil
1 onion, chopped
2 cloves garlic, minced
2 cups long-grain rice
1 capsicum, diced
1 cup diced tomatoes (canned or fresh)
2.5 cups vegetable stock
1 cup black beans, canned, drained
1 tsp. cumin
Salt and pepper to taste
Fresh cilantro for garnish
Juice of half a lime
Instructions:
In a large pot, heat the oil over medium. Sauté the onion and garlic until translucent.
Add the rice and sauté for 2 minutes.
Add bell pepper, tomatoes, and vegetable stock. Stir well.
Cover and let it simmer on low heat for 10 minutes.
Add black beans, cumin, salt, and pepper. Stir and continue cooking until rice is done.
Once off the heat, stir in lime juice and garnish with cilantro.
